In one word: Custardy
Europa Cakes was my last vanilla slice from the 'Big Four' cake shops on Acland Street, and arguably the best on the street. Notably the portion size and freshness of the ingredients were the highlight here. The custard was just that; custard. It was creamy, full of vanilla extract and a lovely smooth texture, with a hint of egg. The pastry was delicately crisp, coated slightly with white chocolate to ensure the pastry doesn't absorb the moisture of the custard - a first on my travels. A generous dusting of icing sugar was just enough to ensure the correct sweetness against the pastry. An altogether lovely slice from start to finish.
