In one word: Faultless?
I found this little gem of a place via another persons blog about food on the Mornington Peninsula, and they swore that this was hands down better than the Sorrento vanilla slice. They were not wrong, the original site can be found here:

At $3 cheaper than the slice in Sorrento my wallet was happy, then what followed soon after made me question whether it deserved a 10/10 and was indeed better than my favourite at Gustos. Their pastry is made on site and was absolutely stunning, possibly the nicest, golden and buttery pastry I have sampled in a vanilla slice. The custard too was divine, in fact it was faultless. Thick, creamy, full of egg and a real punch of vanilla, not to mention extremely generous in portion size. As good as Gustos, but a 10/10 would mean my search would be at an end, so not just yet! Having finished at the Pantry I went to the Peninsula Hot Springs and was tempted to buy another one for the ride home having discovered that the Pantry stock the Springs with their delicious goods! Handy to know in case the Pantry sell out next time.
