At an unscheduled stop in Redbank, it was approaching morning tea so therefore I went in search of my customary snot block. I successfully found Redbank Bakehouse, a well presented, good all round establishment filled to the brim with delicious looking cakes, slices and pies. I was pleased to see the handsome, well constructed slabs of vanilla slice so immediately purchased one and went to eat it nearby.

With a wooden fork for assistance I was overjoyed to crunch through the layers of pastry with relative ease and sample mouthfuls of all elements. The pastry was very well baked, with even the middle layer proving resistant to moisture. The mounds of whipped creamy custard inevitability made a mess in the bag but was rather good, but very filling. This bakery have their recipe and quantities very well set up. Three wafer thin, crispy layers of tightly baked pastry and a generous helping of two layers of decent quality vanilla custard is a good mix in anyones book. At $5 it’s excellent value, but I highly recommend eating with a fork as I cannot imagine how messy this would have been if picked up,
