With a stop in Ashgrove on my way home I stumbled upon a bakery I’d never seen or heard of before. It was my obligation to scope out the vanilla slice options, with a half and half French vanilla on offer. Selling at a slightly higher than normal $5.50 I wasn’t sure how the slice would handle under the microscope. Thankfully the custard wasn’t as gelatinous as I first thought and it had a nice vanilla creaminess to it. When eaten with the whipped cream it was especially light and airy. The main problem was the three layers of thin pastry that proved to be limp and not up to task. With a slice constructed like this, it required rigidity and a backbone. It buckled under the pressure and filling oozed out in every direction. Though a nice colour and thickness, the pastry just had the wrong texture and substance. I might find myself back here for another sample, as it was hard to tell if the pasty was indeed just stale or in fact the ingredients used meant the texture was not quite right. I’ll keep you posted...
