My first Western Australia vanilla slice was at a recommended ‘patisserie’ in Joondalup, Perth. I pretty much had this thing pegged from the first glimpse in the cabinet as being disappointing. The custard could have gone either way, but I could see the pastry was to be a let down and an obvious sign of misleading use of the term patisserie once more. The pastry was thinly layered, yes, but under baked and worse still...not crisp and flaky. Taking this thing down with a cake fork was a bit of a workout in itself, with sliding and squashing of the filling all over the plate. Sadly, the custard was a terrible shame too; slimy, tasteless and highly forgettable. The addition of a red piece of icing, stuck with a blob more of the custard really was a poor excuse to disguise the below par components and recipe these guys use. I’m hoping that I will uncover a better vanilla slice in WA soon!
